How does one tell if a Mac's processor is 32-bit or 64-bit?

And why update Java...

Presumably one has to find the old version and manually replace it with the new one. Whatever for? Most updates are installed automagically.
Ya gotta applaud those bunnies for sacrificing their hearing just so some guy in Cupertino can have better TV reception.

Your mini is a Core2 Duo, so yes, it's 64 bit.

I don't know why it doesn't replace the older version of Java, but you can make it the default instead of version 5 if you wish:
