How does one clear the cache in Safari? I can see a History Clear in a menu but no where do I see the ability to clear cache as you can in IE prefs.

Open the
Safari
menu next to the Apple.
Right below Reset, it should say Empty Cache.
The easiest way to handle the cache is to set the preferences to delete the cache on quit.

Rick, Such that it is, go to Safari's menu bar, Safari->Empty Cache (or Command+Option+E)

I noticed the "empty cache"setting when I started using Safari the other day. Is there a place to set the cache size? If so, what's recommended? If not, how often should it be emptied?

Rob, Sorry no, Safari its elf does not allow setting of cache size. But perhaps some third party product does. Maybe some kind soul who really knows can shed some light.

For the paranoid...I mean, security-conscious folks among us:
NetShred X
There is a version for OS 8/9 too.
I use NetShred set to automatically shred my caches and e-mail trash. Works like a charm. ShredIt is a companion app for shredding all manner of data on your Mac. You can put a neat little shredder icon on your desktop...
