It's ages ago since I had a Lion, but on choosing this for a friend - I am thinking how could I add my copy of Microsoft Word to it (2011) - and then in the past you could get it on a torrent.

How do you transfer files from a Sierra to Lion?

Or how do I add the basic files that she would need?

I'm not sure I understand your questions.

"...in the past you could get it on a torrent...." We don't support or use "borrowed" software, even if it is from Microsoft.

"How do you transfer files from OSy to OSz?" Transferring files between different Mac OSes has never changed, as far as I know. Any networking protocol both computers have should work. Ethernet, WiFi, Internet, Screen/file sharing has always worked. USB is not a networking protocol, nor is Thunderbolt (except possibly 'Bridge' mode). FireWire could work if you can start one of the two computers in FireWire mode. That basically converts one computer into a hard drive seen on the normally booted one.

I have no idea what "basic files" you are asking about. Installing an OS or an app should also install all needed files.
