Not at all. The smell is from the oil, not the potatoes. You have to get the oil very, very hot so the latkes will be crispy and not greasy. After a couple of hours' cooking, the oil is … not at its best.
I always use canola oil because I'm afraid olive oil would affect the taste, but I don't know if there's a better alternative.
