Just make the update. Make sure you still have Java disabled on you browser. If you ever need it on some site that needs it, you will get a small alert that you don't have the plugin installed. If that site is critical to your life or banking or calling 911, then click the alert and you will be transferred to the Oracle site to get the latest version. You can then use the bank site, call 911, whatever. Once you leave that site, just verify that Java is again disabled and that you can also delete the plugin (as has been described elsewhere).
If you have some app that requires Java, you should know that by now. So you should already be going to Oracle for updates.
Nothing new, Apple still does not 'support' Java, they are simply telling you that an update is available at Oracle. My recommendation remains to disable it unless you know why you need it.
