Entourage is the best OS X email program IMHO, though some make that claim for others. As I am often sending attachments to PeeCee-users, I MUST have the ability to encode them as needed, something that Mail doesn't provide. That said, I do use Mail on occasion and it works fine for most things. You can set up all your accounts in Mail (or Entourage) very easily - Entourage will even import everything for you. Mail will import your email folders, but getting your addresses imported is a little more involved. To import your email ADDRESSES to Mail use the Applescript inside the Applescript folder in the applications folder (Applications->Applescript->Example Scripts->Mail Scripts->Import Addresses) This question actually prompted me to discover this nice little script (posted on another board). I had been considering paying for a similar script from Applescript.com - one that admittedly keeps Address Book and the Entourage contacts synched, which I can't claim for the freebie script - but free is good, and if you're not switching back and forth all the time, you don't need the synching.
Entourage used to be available only as part of Office X, but it can now be purchased as a standalone program. Here's one retailer with the best price I could find on a quick look:
